The Difference Between Ribs and Tips

We hear a lot of chat about the difference between ribs and tips and decided it was time to set the record straight.

What Are Ribs?

At Porky’s we serve up baby back ribs with tips.

Baby back ribs are cut from where the rib meats the spine after the loin is removed. These upper ribs are called baby back because they’re smaller than the larger spare ribs (not because they’re taken from a piglet!).


What Are Tips?

Tips or rib tips are a revelation for Memphis BBQ newbies. Tips are unbelievably tender and smoky ends, attached to the lower end of spare ribs, between the ribs and sternum. Unlike spare or baby back ribs the structure of the ribs comes from dense cartilage not bone.
